Cozy Up with "Slumgoli": A Hearty One-Pot Stew Packed with Comfort and Nutrition

The holidays make me want comfort food....

Here is my grandparent's "Slumgoli" This charming word was derived by my Grandfather(after some Texas Pride Beer) from the original Slumgullion which is an American one pot beef Stew.  I try to keep my beef intake down to once per week, but this soup is a superb way to have a protein and veggie packed meal.

Ingredients:

2 pounds steef meat trimmed and cubed(I bought mine already cubed to save time)

3 TBSP flour

1 tsp garlic powder

1 tsp salt

1 tsp pepper

3 TBSP olive oil

1/2 onion chopped

6 cups beef broth

1/2 cup red wine

4 Russet Potatoes or 6 Red Potatoes

4 Carrots

4  Celery stalks

3 TBSP Tomato Paste

1-2 Fresh Rosemary Sprigs

1-2 TBSP cornstarch

1/2 cup Peas

Method:

Toss Beef with flour, salt, pepper, garlic powder

Heat Olive oil in Dutch Oven

Brown Beef mixture

Add Onions and brown onions with beef

Add beef Broth and red wine, while deglazing the pan

Add all remaining ingredients except peas and corn starch slurry

Cover and simmer for 1 hour or until beef is tender

Mix 1 tsp cornstarch with 1 tsp water, add slurry to stew, may increase amount of starch depending on desired thickness

Add peas 5-10 min before serving
