Tacos Gobernador de Camarón, or Governor’s Shrimp Tacos, are a delicious fusion of a taco and quesadilla. Originating in Mazatlán, Sinaloa, this dish features tender shrimp, smoky poblano peppers, melted cheese, and a flavorful tomato-chipotle sauce. While traditionally served in flour tortillas, you can make a healthier version by opting for corn tortillas, serving it with brown rice, or pairing it with avocado for an extra nutrient boost.

Ingredients
- 4 tablespoons unsalted butter
- 1 1/2 white onions, thinly sliced
- 2 poblano chiles, stemmed, seeded, and cut into strips
- 5 cloves garlic, minced
- 2 ripe tomatoes, cored, seeded, and sliced
- 3 tablespoons chipotle adobo sauce
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon freshly ground black pepper, or to taste
- 750 g (about 11 to 15) large shrimp, peeled and chopped
- 3 cups grated Oaxaca, asadero, mozzarella, or Muenster cheese
- 6-8 flour or corn tortillas
- Avocado slices for garnish
- 1 manzano chili, thinly sliced, mixed with the juice of 1 lemon and salt to taste

Method
- In a large nonstick skillet, heat the butter over medium-high heat. Once melted and bubbling, add the onion and poblano pepper. Sauté for about 3 minutes.

- Add the tomatoes and cook for another minute. Once they begin to soften, mix in the chipotle adobo, tomato paste, Worcestershire sauce, salt, and pepper.
- Stir well, cook for another minute, and then add the shrimp. Cook for 1 to 2 minutes, just until they turn pink. Remove from heat to prevent overcooking.
- On a hot griddle over low heat, warm the tortillas on both sides for one minute.
- Sprinkle about 1/2 cup of shredded cheese on each tortilla. When the cheese begins to melt, top it with a generous portion of the shrimp mixture.
- Fold the tortilla in half and heat until the cheese is fully melted and the tortilla becomes lightly toasted.
