For the Chicken

4 boneless, skinless chicken thighs

2 tsp chili powder

1 tsp paprika

1 tsp salt

2 tbsp olive oil

2 tbsp fresh cilantro, minced

Juice of 1 lime


For the Rice

1 cup basmati rice

2 cups water

2–3 tsp Knorr Caldo con Sabor de Pollo

1/4 red bell pepper, diced

1/4 purple onion, diced


Other Ingredients

1 large avocado

1 can refried or black beans

Salsa and shredded lettuce (optional)


Instructions


1. Marinate the Chicken

Combine chili powder, paprika, salt, olive oil, cilantro, and lime juice in a bowl.

Coat the chicken thighs in the marinade and let them rest for 15–20 minutes.


2. Cook the Chicken

Pan fry the marinated chicken thighs until they reach an internal temperature of 165°F. Let them rest before slicing into strips.


3. Prepare the Rice

Bring 2 cups of water and Knorr seasoning to a boil.

In a separate pan, brown the basmati rice with diced onion and red bell pepper until fragrant.

Add the boiling water to the rice, reduce the heat, cover, and simmer for about 15 minutes, or until the rice is tender. Add extra water if needed.


4. Warm the Beans

Heat a can of refried beans or black beans until warm.


5. Assemble the Bowls

Layer rice, beans, sliced chicken, and avocado in a bowl. Add salsa and lettuce for extra crunch and flavor.
